His research and lectures in Italian and foreign universities emphasise food history and culture, food systems, agriculture and green emerging technologies, cultural heritage and musealisation.
Member of the researcher directory of IEHCA - L'Institut Européen d'Histoire et des Cultures de l'Alimentation and co-founder of the International Society for Gastronomic Sciences and Studies.
